Paleo Sandwich Skewers
For those days when you just want a sandwich!
When I "went paleo" about 7 years ago, I didn't miss bread at first. But then, I saw a commercial for Helman's mayonaise where they made this scrumptious looking BLT. I couldn't get the idea of sandwiches out of my head.
These skewers give you all the good stuff in a sandwich without the bread.
Plus, they're a huge hit at BBQs and picnics!

Roast beef sandwich skewers
Ingredients
1 pound roast beef, sliced thick
Kerrygold aged cheddar cheese
Dill pickles
Spinach, arugula, or your favorite salad green
Small wooden skewers
Whole grain mustard, optional
Directions
Slice the roast beef into 1 inch wide slices.
Cut the pickles into chunks. I did them about 3/4 inch and put two on each skewer. You can do them larger or smaller depending on how much you like pickles.
Cut the cheddar into 1/8th inch slices and then cut them into 1 inch pieces.
Start with a pickle on one end of the skewer. Layer cheese, spinach, roast beef, then reverse the order and end with a pickle on the other side.
Lay the skewers in a large tupperware and refrigerate until ready to servce. Can be made up to do 3 days in advance.
Italian Sandwich Skewers
Ingredients
1 pound salami
1 jar roasted red pepper
Spinach
solid feta cheese or mozzarella balls
Small wooden skewers
Directions
Slice the roasted red pepper into 1 inch pieces, squareish
Slice the cheese into 1/2-3/4 inch cubes
Start with the cheese on the skewer, layer red pepper, spinach, fold up the sausage, then repeat the ingredients in reverse ending with a piece of cheese.
Lay the skewers in a large tupperware and refrigerate until ready to servce. Can be made up to do 3 days in advance.
